The blend: Exclusively first press – the purest juice – Pinot Noir (45%), Chardonnay (33%) and Pinot Meunier (22%), part of which (20%) was in the barrel for the first fermentation.
Aging: Aging is longer than the legal requirement; three years later, then a minimum of five months after disposal.

Palate
Lively and lively, thanks to a low dosage, the aromas on the nose are echoed in the mouth. Primary flavors of citrus fruits, almonds and toasted bread, very quickly joined by gooseberry jelly, but also dark fruits like cherry, fig and blackberry. As the wine opens into the glass and warms, it expresses the flavors of plum and pear. The palate is full, quite long with a very clean finish.
Aroma
The primary aromas reveal the citrus fruits of Chardonnay: lemon and grapefruit. Then the aromas of red fruits of Pinot Noir appear: red currant, raspberry, cherry. When left to open in the glass, the wine shows notes of dry, sometimes exotic, fruits of Pinot Meunier.
Tasting notes
The golden color of the straw reveals a high presence of Chardonnay and the exclusive use of the first pressing. The fine bubbles are due to a rigorous selection of the best grapes, perfectly controlled temperature in the cellar and a long time of aging.
