The Great Sendrée Cuvée was named after a parcel of ash-covered earth after the fire that struck Urville in 1838. A spelling error escaped in a new version of the land registry, it is with an “s” that this cuvée is designated today . A reproduction of a bottle of the eighteenth century found in the cellars of Urville is used and the Great Sendrée is completely handmade. Since the 1999 vintage, it is also available as Magnum.

Grapes

Chardonnay, Pinot Noir.

Palate

The champagne has a pure and intense flavor with notes of grape, peach, notes of red fruits and spicy touches in a long finish.

Aroma

The aroma of champagne has notes of fresh grapes, citrus tones and light nuances of aromatic herbs.

Tasting notes

This champagne presents itself in a sweeping pale yellow robe with nuances of topaz. Time has used its patina to reveal the complexity of wine. Hawthorn combines with honey of acacia, beeswax and marzipan. When it is airy, the wine picks up its murmurs, the quince jam meets the raspberry jam and alternates with bergamot and warm brioche. In the mouth it is invigorating, imposing and causes the taste buds. The bead caresses and balances wild strawberry jelly with ripe orange. This harmony extends into a delicate minerality and a charming bitterness in which the tangerine notes arrive.

Suggestions

Ideal as an aperitif. It goes perfectly with crayfish broth and grapefruit, nailed poached with dutch sauce, carpaccio of scallops, rack of lamb with foie gras, cream Bresse birds with truffles, cheese mountain comté at least 18 months old. Serve at 7 ° C.
